Last month I wrote an article for Bambi Magazine with fun and healthy’ish recipes for the kids to prepare and enjoy during the holidays. One of the things I made was a gingerbread nice cream, unfortunately, it looked kind of dull. I wanted to spice it up a bit. Which made me think, what goes well with gingerbread nice cream? In my mind, cookies go well with anything and especially with (n)ice cream! So I set out to make a Gingerbread cookie which would still be kind of healthy. And so these vegan gingerbread cookies (inspired by My Kids Lick The Bowl) with no refined sugar, or no added sugar at all, were made.

Christmas already has enough sugar, and to be honest my kids LOVED these cookies just as much as the store-bought ones. So if you’re looking for a healthier cookie for the holidays, here it is! You’re welcome 😉

VEGAN GINGERBREAD MAN COOKIES

Three Gingerbread man cookies
Instructions
  1. Pre-heat oven to 160 degrees Celsius (320F).
  2. Put the applesauce in the food processor and add the chia seeds. Whizz it just enough to have the chia seeds covered by the apple sauce. Let sit for 20 minutes, until it begins to gel.
  3. After 20 minutes. Add dates, coconut oil and vanilla to the food processor. Whizz until it becomes a smooth paste.
  4. Put all the remaining dry ingredients in a bowl and mix together with a fork so everything is well combined and semi-sifted.
  5. Add the wet ingredients from the food processor to the dry ingredients.
  6. Mix the dough together until you can form a ball.
  7. Put the dough on a floured workspace, and need until the dough becomes smooth.
  8. Roll the dough to 5mm thickness, and cut into gingerbread man shapes.
  9. Place the cookies on a baking tray. I like to use my silicone mat from Tops, but baking paper will do just as well.
  10. Bake the cookies in the oven for 15-25 mins - until golden. Cooking time will vary depending on the size of the cutters used - the smaller the cookie, the shorter the baking time.
