Last month I wrote an article for Bambi Magazine with fun and healthy’ish recipes for the kids to prepare and enjoy during the holidays. One of the things I made was a gingerbread nice cream, unfortunately, it looked kind of dull. I wanted to spice it up a bit. Which made me think, what goes well with gingerbread nice cream? In my mind, cookies go well with anything and especially with (n)ice cream! So I set out to make a Gingerbread cookie which would still be kind of healthy. And so these vegan gingerbread cookies (inspired by My Kids Lick The Bowl) with no refined sugar, or no added sugar at all, were made.
Christmas already has enough sugar, and to be honest my kids LOVED these cookies just as much as the store-bought ones. So if you’re looking for a healthier cookie for the holidays, here it is! You’re welcome 😉
